1鳗鱼用自来水喷淋解冻,去除内脏、洗净,用开水氽烫1分钟后捞出;放入清水中浸泡片刻,洗净鳗鱼身上的黏液;姜洗净,切片;葱段切末。

2鳗鱼平放在案板上,从尾部沿脊骨的方向往前平行切割,切出整片的去骨鳗鱼肉;另一面再平行剔去鱼骨。

6烤箱预热200℃,中层,烤8分钟后取出;刷一层叉烧汁,继续烤7分钟。食用时可撒上白芝麻和海苔碎。
